I used ChatGPT AI to generate this recipe for vegan hot cross buns. Like the banana bread recipe, I think this one turned out really well. This recipe was really easy to follow, especially if you have already made the vegan brioche rolls. Be sure to follow the concept of that video by adding the butter after you mix the dough. You do not want to hydrate the dough with the butter. Also, I found that I needed to add about 25 grams more of flour.

Vegan Hot Cross Buns
This is a super easy to follow and great tasting recipe for vegan hot cross buns! I hope you will enjoy it!
Ingredients
- 500 g All Purpose Flour
- 50 g Sugar
- 7 g Salt
- 2 g Cinnamon
- 1 g Nutmeg
- 1 g Allspice
- 1 g Ground Ginger
- 113 g Vegan Butter (softened)
- 360 ml Plant-based Milk
- 7 g Active Dry Yeast
- 100 g Raisins
- 50 g Dried Cranberries
- 1 Zest of Orange
- 1 tbsp Maple Syrup (or agave)
- 120 g Powdered Sugar (sifted)
- 15-30 ml Plant-Based Milk
Instructions
- In a large mixing bowl, combine the flour, sugar, salt, cinnamon, nutmeg, allspice, and ginger. Mix well.
- In a separate mixing bowl, combine the melted vegan butter and warm almond milk. Add in the active dry yeast and let sit for 5 minutes. *SEE NOTES BELOW
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Add in the raisins, cranberries, and orange zest and knead until the dough is smooth and elastic.
- Cover the dough and let it rise in a warm place for 1 hour.
- Preheat your oven to 375°F (190°C). Grease a baking sheet.
- After the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a ball and place them on the greased baking sheet.
- Cover the buns and let them rise for another 30 minutes.
- While the buns are rising, make the flaxseed egg substitute by mixing 1 tbsp of flaxseed meal with 3 tbsp of water. Let it sit for 5-10 minutes until it thickens.
- Brush the buns with the flaxseed mixture and bake for 15-20 minutes until golden brown.
- In a small bowl, mix together the powdered sugar, maple syrup, and plant-based milk until a thick glaze forms.
- Once the buns have cooled slightly, drizzle the glaze over them in the shape of a cross.
Notes
NOTE: When adding the butter, I highly recommend adding it after you have mixed the dough with the other ingredients. If you add it ahead of time, the butter will hydrate the dough, which you do not want to do.
Also, I did not use the 1 tbsp flaxseed meal mixed with 3 tbsp water in this recipe. I found it was just not necessary. It is used as an egg replacer, but really, these rolls do not need an egg for binding.
